So…I read about these sugar-free, flour-free, oil-free, egg-free, butter-free cookies. My only concern was that they were also chocolate chip free (and that they started with a can of garbanzo beans) but had to try it.
The dough came together quickly in the food processor. Recipe said it made 16 cookies. I used a size 32 scoop and got about 40. I baked them the entire 17 minutes despite their smaller size and they still looked like dough balls. Sorta still do.
So, you’re wondering….how were they? Well my taste tester gave them a “pretty good for sugar-free, flour-free, nothing else sweet in the house on this Sunday night” rating. Thank you Hummusapien.com!
